Can you tell I am totally in a summer food mood?! Shrimp tacos are one of my favorite foods for eating outside in the summer. And topped with mango salsa…yum! These tacos taste so fresh and flavorful. My only mistake was not making more–we were obsessed! The salsa is also delicious left over with chips! I couldn’t believe how low in points these delicious shrimp tacos were!
Shrimp Tacos with Mango Salsa
3 oz Shrimp, deveined and cooked
2 tsp Chili Lime Rub (here
1 Mango, peeled and chopped
1/4 Vidalia Onion, chopped
1/4 Tomato, chopped
3 T Fresh Cilantro, chopped
Juice from Half of a Lime
1 tsp Salt
2 La Tortilla Factory LC Tortillas
1 T Mexican Blend Cheese
In a bowl, season shrimp with chili lime rub.
In a separate bowl, mix together mango, onion, tomato, cilantro, lime juice, and salt.
In a medium saucepan, heat shrimp on medium high heat for one minute.
Microwave tortillas for 30 seconds.
Add 1.5 oz shrimp to each tortilla.
Top with mango salsa and 1/2 T cheese.
